<p>หากเราต้องการจะทำอาหารพวกผลิตภัณฑ์พร้อมบริโภคสักชนิด เราก็ต้องไปขึ้นทะเบียนกับ อย. ทีนี้เราก็อาจสงสัยว่าเราสามารถใส่วิตามินและเกลือแร่ลงไปในอาหารได้ไหม แล้วใส่ได้เท่าไร</p>



<p>อันที่จริง เราสามารถเติมวิตามินและเกลือแร่ลงไปในอาหารได้ตามหลักการ fortification โดยปริมาณที่กำหนดหมายถึงปริมาณวิตามิน เกลือแร่สุทธิ ในผลิตภัณฑ์พร้อมบริโภค โดยคิดต่อการบริโภคต่อวัน (จำนวน 3 มื้อในหนึ่งวัน มื้อละหนึ่งหน่วยบริโภค ยกเว้นที่ระบุชัดเจนว่าเฉพาะมื้อ เช่น breakfast cereal คิดวันละ 1 มื้อ) ดังนี้</p>

<li>วิตามินที่ละลายได้ในไขมัน 150% RDI *</li>



<li>วิตามินที่ละลายได้ในน้ำ 200% RDI</li>



<li>เกลือแร่ทั่วไป 150% RDI</li>



<li>โซเดียม 100% RDI</li>



<li>เหล็ก, สังกะสี 120% RDI</li>



<li>ฟลูออไรด์ ต้องเป็นไปตามความเห็นชอบของสำนักงานคณะกรรมการอาหารและยา<br>(* RDI หมายถึง ค่าสารอาหารที่แนะนำให้บริโภคประจำวันสำหรับคนไทยอายุตั้งแต่ 6 ปีขึ้นไป)</li>
</ul>



<p>อย่างไรก็ดี หลักการนี้มีข้อยกเว้นอยู่บ้าง โดยเฉพาะอาหารที่มีวัตถุประสงค์ในการรับประทานเป็นพิเศษซึ่งมีข้อกำหนดเป็นการเฉพาะ เช่น นมดัดแปลงสำหรับทารกและเด็กเล็ก อาหารทารกและเด็กเล็ก อาหารสำหรับผู้ที่ต้องการควบคุมน้ำหนัก อาหารที่มีวัตถุประสงค์พิเศษ ผลิตภัณฑ์เสริมอาหาร เครื่องดื่มเกลือแร่ เครื่องดื่มที่มีแคฟเฟอีน ข้าวเติมวิตามิน เกลือบริโภค เป็นต้น อย่างผลิตภัณฑ์เสริมอาหารก็มีประกาศเฉพาะของตัวเอง ได้แก่ <a href="https://food.fda.moph.go.th/media.php?id=510390773427085312&amp;name=034ntffda_Use_of_Vit&amp;Min_in_Food_Supplement.pdf">ประกาศสำนักงานคณะกรรมการอาหารและยา เรื่อง ข้อกำหนดการใช้ส่วนประกอบที่สำคัญของผลิตภัณฑ์เสริมอาหารชนิดวิตามินและแร่ธาตุ</a> ส่วนอาหารที่มีวัตถุประสงค์พิเศษก็อาจขึ้นกับวัตถุประสงค์ของการใช้อาหารชนิดนั้นๆว่าสิ่งที่เติมลงไปสมเหตุสมผลตามวัตถุประสงค์และหลักการทางวิทยาศาสตร์หรือไม่ </p>



<p>สำหรับค่าสารอาหารที่แนะนำให้บริโภคประจำวันสำหรับคนไทยอายุตั้งแต่ 6 ปีขึ้นไป (RDI ของไทย หรือ Thai RDI) สามารถสรุปได้ดังตาราง</p>
